EASY YUMMY SUGAR COOKIES

Ingredients

1-1/2 cups sugar
1 cup unsalted butter, or shortening
2 eggs
4-1/4 cups all purpose flour
1-1/2 tsps. baking powder
1/2 tsp. salt
1 tsp. vanilla extract
1 cup milk
1 egg white\cooked
1/2 tsp. water
1 cup powdered sugar
1/4 cup plus 1 Tbsp. milk

Instructions

Preheat oven to temperature 350°F. Cream together the sugar and the butter or
shortening Add the eggs, mixing well. Add the dry ingredients and mix until well
blended. Stir in the vanilla and milk. Roll out the dough on a lightly floured surface to
about 1/4 inch thick. Cut out shapes with cookie cutters. Whisk together egg white
and water in small bowl. Brush on cookies before baking. Place on a baking sheet
and bake in a preheated oven for 8-10 minutes. The cookies are done when the
edges start to brown because they will continue to cook slightly on the hot baking
sheets when you remove them from the oven. Allow to cool. In a small bowl, mix
together powdered sugar and milk to make a spreadable glaze. Brush on cookies
after they have cooled. Store in an airtight container.
ROLL IT UP

Fun and easy to make. Kids Love 'em


1 pound thinly sliced deli roast beef

2 packages (6 ounces each)  soft spreadable
cheese/ or Cream Cheese

4 flour tortillas (10-inch diameter)

1 cup shredded carrots

1 cup shredded Monterey Jack cheese

8 leaves leaf lettuce

Carrot curls (optional)

Spread cream soft cheese evenly on one side
of each tortilla. Top evenly with shredded
carrots and Jack cheese. Layer lettuce and
deli roast beef evenly on cheese, leaving
1/2-inch border around edge. Roll up tightly;
wrap in plastic wrap. Refrigerate 30 minutes
before serving.

To serve, unwrap and cut each roll in half.
Garnish with carrot curls, if desired.

Makes 4 servings.

Tip: Roll-ups may be prepared ahead of time;
wrap and refrigerate up to 8 hours before
serving.
